Vegetarian Kibbeh... One of the easy and quick kibbeh recipes to prepare, it has a very distinctive and delicious taste. It looks similar to traditional kibbeh, but it is meat-free. It is a suitable recipe for those who follow a vegetarian diet. Try it the way Sayidaty Kitchen does.
Mix the bulgur with one cup of olive oil.
Add the flour, salt, spices, dried mint, grated onion, and water to the bulgur and mix well to form a cohesive dough.
Heat the remaining olive oil over low heat and add the sliced onions and stir until translucent.
Drain the onions from the oil and sauté the pine nuts in the onion-frying oil. Remove from the heat after browning and drain well.
Shape the kibbeh discs into their traditional shape and stuff them with the onions and pine nuts.
Fry the kibbeh in deep oil until golden brown, then drain on paper towels.
Serve the vegetable kibbeh hot or cold.
