Corn: ½ cup

Vegetable oil: 2 tablespoons

Peas: ½ cup

Hot water: 3 cups

Cashew nuts: ¼ cup (roasted)

Salt: ½ teaspoon

Step 1

Soak the rice in cold water for 35 minutes, then drain.

Step 2

In a medium saucepan over medium heat, add the water, carrots, corn, and peas, and sprinkle with salt. Bring to a boil.

Step 3

Add the rice, then add the oil and salt.

Step 4

Cover the pot, reduce the heat, and simmer for 30 minutes until the vegetables and rice are fully cooked.
