Baking powder: 1 teaspoon (gluten-free)

Xanthan gum: 1/4 teaspoon

Butter: 1/3 cup (cold/plus 2 teaspoons/diced)

Confectioner's sugar: 4 tablespoons

Milk: 1/2 cup

Lemon juice: 3 teaspoons

Vanilla extract: 1 1/2 teaspoons

Egg: 1 (beaten)

Raisins: 2 ounces (golden raisins or sliced ​​cherries/optional)

Step 1

Preheat the oven to 200°C. Line a baking tray with non-stick paper and place it in the oven to heat through.

Step 2

Mix together the flour, baking powder, and xanthan gum, then rub in the cold butter, cut into cubes, with your fingertips. Then add the sugar and, if desired, raisins or cherries.

Step 3

Lightly warm the milk in a jug. Add the lemon juice and let it stand for a minute or two. It will curdle. Then add the vanilla to the milk and whisk until well combined.

Step 4

Make a well in the center of the dry mixture, pour in the wet mixture, and mix with a metal fork or knife until a slightly sticky dough forms.

Step 5

Shape the dough into a 4 cm thick circle; the longer the better. Don't overwork the dough, or it will be tough once baked.

Step 6

Fill a 5 cm round cookie cutter and cut out the biscuits.

Step 7

Brush the scones with beaten egg and transfer them to the hot baking tray. Bake in the oven for 12-15 minutes, until golden brown on top.

Step 8

Leave to cool and serve with jam and cream. You can store in an airtight container or freeze for up to 3 months.
