Step 1

In a non-stick skillet over medium heat, melt the butter, then add the chopped bell peppers, onions, tomatoes, and spinach. Let them cook for two minutes.

Step 2

Then, whisk the egg whites with the Cheddar cheese, pour this mixture over the vegetables in the skillet, and sprinkle with salt and black pepper. Leave the eggs on the heat until cooked through, then flip them over.
