Basmati rice: 2 cups (washed, soaked, and drained)

Hot water: 1 1/2 cups

Salt: 1 tablespoon

Red pepper: 1/4 teaspoon (ground)

Kabsa spice: 1 tablespoon (ground)

Cumin: 1/2 teaspoon (ground)

Turmeric: 1/2 teaspoon

Tomatoes: 1 (large, peeled, and crushed)

Onion: 1 (sliced)

Dried dried limes: 1 (lemon)

Ghee: 1 tablespoon

Vegetable oil: 1 tablespoon

Raisins: 1/4 cup (fried, for garnish)

Nuts: 1/4 cup (fried, for garnish)

Details

Step 1

Put the ghee and oil in a saucepan over medium heat. Add the onions and stir until they wilt and become translucent.

Step 2

Add the dried dried lime, kabsa spices, cumin, turmeric, crushed tomatoes, and red pepper and stir for 3 minutes.

Step 3

Add salt, drained rice, and water. Cover the pot, reduce heat, and simmer for 25-30 minutes, or until the rice is cooked.

Step 4

Put the rice in a serving dish, garnish with raisins and nuts, and serve hot with Kabsa Daqoos or yogurt, if desired.
