Chickpeas: 1 cup (boiled)

Potatoes: 1/2 (boiled)

Onions: 2

Peppers: 3 (chopped)

Garlic: 2 cloves

Mushrooms: 1 cup (chopped)

Parsley: 5 tablespoons (chopped)

Vegetable oil: 2 cups

Cornflakes: 1/2 cup

Breadcrumbs: 1 cup (ground)

Salt: a pinch

Black pepper: a pinch

Details

Step 1

Roughly chop the zucchini, onion, garlic, boiled chickpeas, mushrooms, and peppers. Add all the vegetables to the mashed potatoes in a deep bowl and stir well until combined.

Step 2

Add the fine breadcrumbs, cornflakes, and chopped parsley, then season with salt and black pepper.

Step 3

Mix the ingredients well until you get a consistent dough, then shape the dough into equal-sized discs.

Step 4

Heat vegetable oil in a frying pan over medium heat, then fry the burger patties until golden brown. Drain the oil, place them on a serving plate, and serve hot.
