Rice: 1 cup

Tomatoes: 6

Olive oil: 4 tablespoons

Black pepper: 1 teaspoon

Salt: ½ teaspoon

Garlic: 3 cloves (crushed)

Parsley: 3 tablespoons (chopped)

Parmesan cheese: ½ cup (grated)

Step 1

Cook the rice until tender, then set aside.

Step 2

Preheat the oven to 250°C.

Step 3

Cut the tops of the tomatoes and reserve them. Set aside, then remove the seeds and squeeze them into a small bowl.

Step 4

Grease a baking dish and arrange the tomatoes in it.

Step 5

Mix the rice with the tomato juice, add the garlic, parsley, Parmesan cheese, 2 tablespoons of olive oil, and salt to taste.

Step 6

Stuff the rice inside the tomatoes, and spread the remaining rice in the tray. Pour in the tomato juice, then cover the stuffing with the slices you cut from the top.

Step 7

Place the tray in the oven and leave it for 20 minutes until cooked through.
